“We wanted to work with local growers on this project,” stated Chef Allison Vines-Rushing, “We also wanted to deliver a menu that vegetarians and non-vegetarian could enjoy; while I love meat, vegetarian dishes can also be just as delightful.”
Both chefs worked closely with the CCFM, local farmers and food producers, to create a hearty and delicious menu that highlights fresh ingredients and products grown right in our backyard. The first course features Ryals Goat Cheese, the second, Feliciana Greenhouse Lettuce, the third, Jim Core’s Taylor’s Happy Oaks Farm Greens, and the finale, courtesy of Johndale's Farm.
"One of the amazing things about living in New Orleans is that even after such a cold, wet winter and an unseasonably chilly start of spring, the Crescent City Farmers Market is still full of fresh, local vegetables all sorts of leafy greens, tender lettuces, beets, radishes and other root crops, plus Louisiana strawberries,” stated Director of Markets, Emery Van Hook, “Allison and Slade are both so incredibly talented, especially when it comes to vegetarian cooking. We love that they're putting local vegetables at the center of the plate for this dinner!
