Simple Butterbeans

The Indian Springs Farmers Co-op has been bringing their delicious fresh shelled beans to all of our markets for years. If you haven’t picked up a bag for yourself yet, stop by market this week and do so! Check out this recipe that’ll have you right on your way to enjoying these tasty legumes.

Serves: 4

Serving size: 1 cup


2 pounds butterbeans

½ teaspoon salt

1 tablespoon butter

¼ teaspoon ground black pepper

  1. Shell the beans and wash thoroughly.
  2. Put 2 cups water and the salt in a medium saucepan and add the beans.
  3. Cook the beans until tender, about 30 minutes.
  4. Drain the liquid and add the butter. Sprinkle lightly with the black pepper. Serve with brown rice.
