Roasted Carrots

Serves 6-8

Serving size: ½ cup




8 carrots

1 red onion, chopped

1 tablespoon olive oil

1/8 teaspoon allspice

Salt to taste

¼ cup raisins

¼ cup walnuts

Juice from 1 lemon

Chopped cilantro or dill if desired



  1. Cut the carrots into 1-inch sticks.
  2. Toss carrots in bowl with red onion, oil, allspice, and salt. S
  3. Spread on baking sheet and roast at 425 F for 10 minutes.
  4. Meanwhile, soak raisins in ¼ cup water. Add the raisins and walnuts to carrots. Stir and continue roasting, about 10 more minutes.
  5. Remove from oven and toss with lemon juice, cilantro, dill, and salt to taste.
