Butternut Squash and Apples

Serves 4

Serving Size: ½ cup



1 butternut squash

2 apples

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ cup brown sugar

2 tablespoons butter



  1. Preheat oven to 375 degrees. Peel squash.  Cut squash in half and scoop out seeds.  Chop squash into cubes.  Microwave with small amount of water until tender.
  2. Cut apples into chunks.  Mix squash and apple chunks with cinnamon, nutmeg, brown sugar, and butter.
  3. Bake in casserole dish until squash and apples are tender.  Check occasionally.
