Imagine if grilled cheese and tomato soup had a sophisticated, but sociable cousin who went to art school and owns a gallery and a poodle. That’s what we think of this roasted cherry tomato Caprese salad from Bon Appetit and just love the deep, umami yet sweet tomato-ey flavor that roasting tomatoes releases. It’s delicious and cozy grownup finger-food. Grab a couple of pints of cherry tomatoes from Tomott’s Cajun Farm and some fresh mozzarella from Country Girls Creamery or T&R Dairy at the Uptown market and get roastin’.
Preheat oven to 350°. Toss tomatoes, thyme, garlic, and oil on a rimmed baking sheet to coat and season lightly with kosher salt. Spread out in a single layer and roast until tomatoes are bursting and lightly browned, 40–45 minutes; let cool.
Arrange mozzarella on a platter and spoon warm tomato mixture with juices over; sprinkle with sea salt. Serve with olive-oil-toasted bread for soaking up all those extra juices.
Do Ahead: Tomatoes can be roasted 1 day ahead. Cover and chill. Gently reheat before using.
