This June, long-time market supporter Executive Chef Gus Martin, who recently took the reigns at Muriel’s Jackson Square, is showing his love for Louisiana blues with a special 4-course Table d’Hote menu featuring wild-caught Louisiana blue crabs.
During the month of June, Muriel’s Jackson Square is keeping it local and spotlighting Louisiana blue crabs by offering the following 4-course menu ($38 per person), in addition to the restaurant's other contemporary Creole fare. A portion of sales from this special menu will benefit the Crescent City Farmers Market.
* Jumbo Lump Crabmeat Ravioli with chanterelle mushrooms and goat cheese
* Roasted Creole Tomato Bisque with Louisiana blue crab and avocado
* Pan-Roasted Soft Shell Crab with a peppery crab cake and bayou crab butter
* Watermelon Sorbet Wedges with black fleur de sel and candied watermelon rind
The Louisiana blue crab fishery is one of the largest crab fisheries in the United States. Over 1,800 commercial fishermen harvest about 50 million pounds of blue crabs from the Gulf of Mexico and Louisiana waterways each year. According to Ewell Smith, Executive Director of the Louisiana Seafood Promotion and Marketing Board, Louisiana’s share of the domestic blue crab market is 26 percent. “The fertile lakes, marshes and wetlands of this ‘sportsmen’s paradise’ are prime sources for Louisiana Blues,” states Smith.
