Tuesday, May 12, he and chef Adolfo Garcia will host a CCFM benefit dinner that's not to be missed. The 5-course, $65 all-inclusive menu will be sourced almost entirely from the market, with accompanying wines selected by Rio Mar wine diva Missy Rauls.
Josh will be at the market Tuesday to shop, but so far he's thinking about starting with spicy cucumber and crawfish pinchos, then moving on to crab, fava and guanciale montadito, market spring mix with pecan-crusted Ryals goat cheese and Johndale Farm strawberries, roasted vegetable terrine with charred Creole tomato sauce, Briarhill Farm quail with blackberry-sherry vinegar gastrique and Creole cream cheese panna cotta with first of the season blueberries, Paw Paw's honey and lavender.
