Certain items at the market sell at record speed - Tuscan kale, Romanesco broccoli and beets, to name a few - so we snatch them up whenever we see them. Beets are one of our current obsessions. We love them roasted and sliced in salads of market lettuces, chard and kale with Ryals' black pepper chevre. They're also delicious and even more nutritious raw. For a healthy side dish or main course that can be served chilled or room temperature, peel raw beets and grate them either by hand or in a food processor fit with a grating blade. Toss them with cooked quinoa, chopped parsley and mint and a simple dressing of Meyer lemon juice, good olive oil, salt and pepper.

This time of the year our backyard gardens are looking a little rough. Thankfully the farmers who sell at the CCFM are much better at weathering the cold and rain than we are. Ponchatoula strawberry grower Heather Robertson covers and uncovers berries depending on temps and precipitation, only picking those that are red and ripe. Jim Core of Taylor's Happy Oaks Farm grows tomatoes in a greenhouse, and Nick Usner recently erected a high tunnel to increase his GROW Farm's winter productivity.

Our good friends Greg and Mary Sonnier of Gabrielle at the Uptowner kick off another year of local chefs committed to cooking with local ingredients this Tuesday. Come out for turkey and okra gumbo, pulled pork with white beans and greens, red cabbage smothered with apples and candied pecans and Mary's decadent triple chocolate brownies.

Last Thursday (12.30), we were reminded of how incredibly convenient it is to have a market just steps away from a really great wine and spirits shop. Cork & Bottle's new owner David Havrylkoff continues the tradition of Thursday evening wine tastings. He's also amassed a craft beer selection that's tough to beat. Pick up a few bottles, some farmhouse cheddar or Asiago from Bill Ryals, Ponchatoula strawberries from Heather Robertson and a couple baguettes from Babcia Kubiak's Graison Gill, and let the tasting continue at home.

We received a late holiday gift last week - an email from Adam Aucoin of Coq Aucoin in St. Francisville, LA letting us know he's ready to come back to the market. If all goes well, Adam should have pastured poultry (whole chickens, a good selection of cuts, including boneless, skinless breasts, and soup packs) through August when it gets too hot for the birds.

One of many more ways we love beets are in Dante's Kitchen Chef Eman Loubier's Wonder Hash. We highly recommend doubling, if not tripling the recipe.
