The heat is rising, which means more and more summertime vegetables. Eggplants, okra and Creole tomatoes have all made their debuts at the market. Grab some cucumbers and peppers for salads and homemade salsa. Eggplant Parmesan is a summer favorite. With this month's Eat Local Challenge underway, eating locally is a snap at CCFM.
