One of our favorite recipes of theirs is a pesto they make using radish leaves. This is a great way to uss up the excess greens after you enjoy those spicy radishes! Bonus: Radish leaves are a great source of calcium and Vitamin C.
2 large handfuls radish leaves, stems removed
2 tablespoons shelled sunflower seeds
4 tablespoons parmesan cheese
1 clove garlic
2 tablespoons olive oil
1 tablespoon lemon juice
1/3 teaspoon salt
Wash radish leaves well and remove and discard stems. Combine all ingredients in blender or food processor and blend until smooth. Serve with pasta, on roasted vegetables, or roasted potatoes.
