Try out this beurre blanc recipe from our very own pickle pros, French Pickl'er, using their very own 'Sweet D' bread and butter pickles and LA Satsuma Kumquat Marmalade.
1/2 cup dry white wine
2 Tbs. LA Marmalade: Satsuma/Kumquat
1 Tbs. 'Sweet D' onion diced
1 Tbs. 'Sweet D' liquid
2 tsp. 'Sweet D' slices diced
1 ea. 'Sweet D' garlic diced
1 half lemon juiced
1 Tbs. butter
To Taste: fresh dill(optional garnish), pinch of salt and pepper
Add all ingredients; except lemon juice, butter, dill, salt, and pepper to small sauce pan (6 inches or smaller in diameter). Reduce on medium heat until syrupy. Turn off heat and add lemon juice. Cut butter into fourths. While butter is still cold, add to reduction sitrring constantly until incorporated. Add fresh dill, salt and pepper to taste. Serve warm over fish or grilled pork with rice.
