     Title: Sausage Skillet

Serves 2

Serving size: 1 cup



1 teaspoon canola oil

2 ounces smoked turkey sausage, cut into ½ inch slices

1 cup frozen diced hash brown potatoes

½ small zucchini, cut into slices

½ medium red bell pepper, chopped

1 wedge red onion, sliced thin

1 clove garlic, minced

¼ teaspoon chili powder

1/8 teaspoon black pepper

¼ cup salsa



  1. In a large skillet, heat oil over medium heat.  Add sausage, potatoes, zucchini, bell pepper, red onion, garlic, chili powder, and place pepper.
  2. Cook for 4-5 minutes or until sausage is browned and the vegetables are tender.  Stir occasionally.
  3. Spoon salsa over sausage mixture and serve.
