     Title: Arugula and Satsuma Salad with Satsuma Dressing

This Arugula and Satsuma Salad really does bring together some of the best ingredients fall has to offer.



Ingredients: Saled

4 cups arugula

2 satsumas, peeled and sectioned

½ small red onion, sliced thinly

½ cup pecans, toasted and chopped

Fresh ground black pepper

Directions:

Toss all ingredients together in a bowl. Serve with the Satsuma dressing.


Ingredients: Salad Dressing

¼ cup olive oil

2 tablespoons red wine vinegar

2 tablespoons Satsuma juice

Pinch of salt

Pinch of black pepper

Directions:

Whisk together all ingredients. Serve alongside salad.


Serves: 4

Serving size: about 1 cup salad and 2 tablespoons dressing
