     Title: Cantaloupe Salad

A refreshing salad during a hot summer!

 

Serves 4

Serving size: 1 cup

 

Ingredients:

1 cantaloupe, cut into 1 inch cubes

3 tablespoons lime juice

2 teaspoon grated lime peel

3 tablespoons chopped fresh mint leaves

2 tablespoons honey

1 tablespoon grated ginger

Pinch of salt

 

Directions:

  1. Place the cubed cantaloupe into a large bowl.
  2. Combine lime juice, lime peel, mint, honey, ginger and salt in separate bowl. Stir until honey is dissolved.
  3. Pour mixture over cantaloupe and toss to blend.
