     Title: Summer Cucumber Salad with Fresh Herbs

Serves 4

Serving size: ½ cup



2 large cucumbers

3 tablespoons vinegar - any type such as white, apple cider or balsamic

Pinch of sugar

Pinch of salt

1/4 cup fresh herbs such as mint, parsley, or basil



  1. Peel and thinly slice cucumbers, place in large bowl.
  2. Add the vinegar, sugar, salt and fresh herbs.
  3. Let marinate in the fridge for 10 minutes.
