     Title: Cucumber Tomato Salad

Serves 4

Serving size: ½ cup

 

Ingredients:

1 medium cucumber

4 Roma tomatoes

2 tablespoons balsamic vinegar

1 teaspoon extra virgin olive oil

Pinch of sugar

2 teaspoon basil

Salt and pepper to taste

 

Directions:

  1. Cut tomatoes and cucumber into small pieces.
  2. Combine vinegar, oil, and sugar. Toss the mixture with the cucumbers and tomatoes.
  3. Sprinkle with basil, salt, and pepper.
