     Title: Green Beans Amandine

Serves 6

Serving size: ½ cup



1 pound fresh or frozen French-style green beans, trimmed

1 tablespoon extra-virgin olive oil

¼ cup sliced almonds

1 teaspoon chopped garlic (about 1 clove)

1 teaspoon fresh lemon juice

¼ teaspoon salt



  1. Bring 3 quarts water to a boil in a large sauce-pot.  Add the green beans to the water and cook until bright green and tender, 3-4 minutes.
  2. Remove to a bowl of ice water, then drain.
  3. Heat the olive oil in a skillet over medium heat about 1 minute. Add the sliced almonds and cook until lightly toasted, about 4 minutes.
  4. Add the chopped garlic and cook until light golden brown, 1 minute. Stir in the lemon juice.
  5. Add the green beans to the skillet and toss until coated. Season with salt. Toss until green beans are heated through.
