     Title: Roasted Okra

Serves 3

Serving size: 6 pods

 

Ingredients:

18 fresh okra pods, sliced 1/3 inch thick

1 tablespoon olive oil

2 teaspoon salt

2 teaspoon black pepper

 

Directions:

  1. Preheat oven to 425 degrees.
  2. Arrange okra slices in one layer on a cookie sheet.  Drizzle with olive oil and sprinkle with salt and pepper.
  3. Bake for 10-15 minutes or until tender.
