     Title: “Fried” Green Tomatoes

Serves 4

Serving size: ½ tomato

 

Ingredients:

2 green tomatoes

½ cup low-sodium soy sauce

½ cup corn flour

½ cup corn meal

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Slice tomatoes.
  3. Combine corn meal and corn flour.
  4. Dip slices in soy sauce, then corn meal/flour mixture.
  5. Place tomatoes on cookie sheet and bake for 7 minutes.  Flip tomatoes and bake for another 5-7 minutes.   Serve plain or with creole mustard for dipping.
