     Title: Savory Smashed Turnips

Serves 6

Serving size: ½ cup



2 pounds turnips, peeled, diced, and boiled for 35 minutes

2 cloves garlic, roasted

2 tablespoons butter

½ cup nonfat milk

2 bay leaves

1 sprig rosemary or ¼ teaspoon dried rosemary

1 bunch chives, thinly sliced



  1. In a large bowl, mash together cooked turnips and roasted garlic until there are no lumps.
  2. In a small pot, cook over low heat butter, milk, and bay leaves.  Stir together gently with a large sprig of rosemary.  Continue to stir until the butter is completely melted.  Turn off heat.
  3. When potatoes are fully mashed, add melted butter and milk.  Discard bay leaf and rosemary.
  4. Add salt, pepper, and chives.  Stir and serve.
