     Title: Apple Slaw

Serves 4

Serving size: 1 cup

 

Ingredients:

1/3 cup cider vinegar

2 teaspoon olive oil

1 teaspoon Dijon mustard

½ teaspoon caraway seeds

¼ teaspoon salt

¼ teaspoon pepper

7 cups red cabbage

1 ½ cups Golden Delicious or Granny Smith apples, diced (about 2 medium apples)

 

Directions:

  1. Combine first 7 ingredients in a large bowl.  Stir with a whisk until blended.
  2. Add cabbage and apples; toss well.
  3. Cover and refrigerate for about 1 hour before serving.
