     Title: Arugula, Onion, and Mozzarella Pizza

Serves 4

Serving size: 1 pizza



1 tablespoon olive oil

1 medium red onion, cut in half and thinly sliced

4 cups arugula, washed, dried, and chopped

Salt and pepper

Four 6-inch whole-wheat tortillas

1 cup shredded mozzarella cheese



  1. Preheat the oven to 400 degrees.
  2. Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring frequently, until golden and the edges are browned, 10 to 12 minutes. Add the arugula, and cook for 1 minute or until it is wilted. Season with salt and pepper.
  3. Place the tortillas on a baking sheet and top each one with the onion mixture. Sprinkle ¼ cup of mozzarella cheese over each. Bake in the oven for about 10 minutes, or until the edges are crisp and the cheese is melted.
  4. Cool for a few minutes before slicing the pizzas into wedges. Serve.
