     Title: Crawfish Etouffee

Serves 4

Serving size: 1 cup



2 tablespoon canola oil

3 cups minced onions

1 tablespoon minced garlic

1 tablespoon chopped thyme

1 tablespoon flour

1 cup reduced sodium chicken broth

1 tablespoon Cajun seasoning

1 teaspoon paprika

1 teaspoon hot sauce

1 pound cooked and cleaned crawfish

¼ cup green onion

2 tablespoons chopped parsley



  1. Heat oil in large saucepan over medium heat; add onions and garlic.  Cook, stirring frequently, until the onion begins looking clear, 8-10 minutes.  Add thyme and flour and cook, stirring for 1 minute.
  2. Stir in broth, Cajun seasoning, hot sauce, and paprika.  Cook until mixture thickens slightly, 2-3 minutes.
  3. Stir in crawfish; bring to a slow simmer, cover and cook stirring occasionally for 10 minutes.  Remove from heat; stir in green onions and parsley.  Serve hot.
