     Title: Baby Spinach Salad with Mustard Vinaigrette

This sweet and tangy salad will turn any spinach-doubter into a believer.





Combine vinegar, red onion, honey, mustard, salt, and pepper in a small bowl or jar. Mix well with a whisk or shake the jar vigorously. Wisk in the oil or add it to the jar and shake vigorously once more.

Add spinach to a large salad bowl.

Top with cucumber, strawberries, green onion, pumpkin seeds, and pecans. Pour over salad dressing and toss to coat.

Serves 4
