     Title: Chilled Cucumber Soup

This week’s recipe comes from our loyal shopper and Community Advisory Team member Bruce Gallassero. We love the farmers market because it’s the perfect place to run into friends and swap recipes. Thanks for sharing, Bruce!



Peel and dice cucumbers into ½ inch cubes. Bring chicken broth to a boil and add the cucumbers, onion, and garlic, and 1 tsp. of fresh dill. Cook for about 20 minutes, or until the cucumbers are clear. Let cool, then pour in a blender and blend until smooth. Strain through a coarse strainer if necessary. Add the yogurt and more fresh dill and mix well. Add salt and pepper to taste. Chill for several hours before serving.
