What do you do with a profusion of green tomatoes? Here is a way to enjoy the unripened beauties for dessert! Preheat oven to 350 degrees.
In a mixing bowl, combine flour, sugar, eggs, oil, baking soda, cinnamon, and salt; mix well. Stir in tomatoes and walnuts (mixture will be very thick). Pour batter into greased and floured bundt pan and bake at 350 degrees for 1 hour. Remove from oven and cool in pan or cake will fall.
