Starting Sunday, February 14th, you can pick up your weekly groceries at New Orleans City Park's Tad Gormley Stadium from 8 am to 12 pm - enter on Marconi at Navarre. As always, the drive thru is 100% pre-order and contactless!

Grandma Christensen’s Carrot Casserole



  • 2 lbs of carrots (or 5 cups)
  • Velveeta cheese, cubed (just enough to cover the top evenly)
  • 1 stick of butter, melted
  • 1 small sweet onion (or any that isn’t a red onion), diced
  • 1 sleeve of Ritz crackers, lightly crumbled


Slice carrots and boil until fork tender

Put carrots in 8x8 casserole dish

Sauté butter and onions on the stove until butter is melted

Pour butter/onion mixture over the carrots

Top with crushed Ritz crackers

Bake uncovered at 350 degrees for 30 minutes or until bubbling
