Epic Eggplant

Fresh & Local

It sure is hot outside, so it’s a perfect climate for warm season vegetables like eggplant! Not only does eggplant tolerate warm weather, it actually thrives in it.

As you may know, eggplants come in a variety of shapes and sizes, from large to lemon sized to long or round. They’re filled with a wide range of nutrients including fiber, folate, potassium and manganese, as well as vitamins C, K, and B6. And sometimes, the leaves and roots are juiced or boiled to make a tonic for throat and stomach trouble and asthma! Super cool, right?

Find many varieties of eggplants at all four of our markets.
