Pick of the Week: Summer Squash

The markets are bursting with summer squash this year and we want to know your favorite way to serve it! Be it green zucchini, the vibrant golden zucchini, the oddly shaped pattypan or the ubiquitous yellow squash – we’re always looking for new ways to cook it. Tuesday’s Green Plate Special

Last week, Empanada Intifada delighted the lunch crowds with delicious baked empanadas with such fun names as “Hispanopita” (spinach with chevrve, tomatillo salsa and honey-roasted pepitas) and “Bean-a Vista Social Club” (Cuban-style black beans with citrus, fried plantain and jasmine rice) and sides of poblano-cream mac & cheese, and sesame quinoa salad. For this weeks recipe of Spicy Squash Pancakes use one type or a combination of zucchini, pattypan and yellow squash. Adjust how hot you want the cakes by adjusting the amount of hot pepper and seeds you use. Prepare small pancakes for an appetizer or side dish, or make larger ones and serve with crusty bread and Salsa Fresca for a full meal. Enjoy!
